Use an apple peeler to peel the skins off each apple. Cut apples in half, then into ½ inch wedges.
Whisk together the flour, apple pie spice and 4 Tablespoons of cinnamon in a medium bowl.
Transfer the flour mixture into a large bowl or container with a lid then add in the apple wedges.
Place the lid on the container then shake vigorously to coat all sides of the apples.
Use a large slotted spoon to remove the apple wedges from the container. Shake off the excess flour mixture and place the wedges on a plate to prepare them for dredging.
In a separate mixing bowl, whisk together the eggs and vanilla extract.
Dredge a few apples at a time into the egg mixture.
Return the wedges to the excess flour mixture in the container and shake them all again to create a second coating.
In a small bowl, mix together the brown sugar and remaining 1 tablespoon of cinnamon, set aside.
Spray the air fryer basket with olive oil nonstick spray then add the coated apple fries to the air fryer basket in a single layer (you will need to make these in two batches).
Liberally spray the top facing apples with olive oil spray then sprinkle half of the brown sugar/cinnamon coating on top of each apple then cook for 6 minutes at 350F degrees.
Open the basket, flip the apples, spray them with nonstick spray and sprinkle with the rest of the cinnamon sugar mixture and cook for an additional 6 minutes.
Serve with caramel sauce or a simple powdered sugar glaze, if desired.
