Ingredients
  

Lobster Tails

  • 3 tails cold or warm-water lobster tails 4-6 ounces each
  • 5 cloves garlic finely minced
  • 1 stick unsalted butter
  • lemon wedges for serving
  • coarse salt to taste
  • freshly cracked pepper to taste
  • melted unsalted butter for serving
  • fresh parsley or chives optional, for garnish

Cooking Instructions

  • Preheat the oven to 400°.
  • Squeeze together the lobster tails at the bottom part of the shell to help the meat remove easily.
  • Using kitchen shears, open up the shell starting at the opening of the tail on top and cut back until you reach the tail.
  • Pull out the meat and place it on top of the shell for presentation, then place on a baking sheet lined with parchment paper.
  • Add the minced garlic to a pot with a stick of unsalted butter and heat over low to medium heat to cook the garlic slightly.
  • Using a spoon or brush, add 2 tablespoons of garlic butter to each tail, ensuring some garlic is on the meat.
  • Season the lobster with salt and pepper.
  • Place the lobster on a middle rack in the oven and cook for 10 to 12 minutes until the internal temperature reaches 135°.
  • Remove from the oven and let it rest for 1 to 2 minutes before serving.
  • Serve the lobster tails on the sheet tray garnished with chives or parsley and leftover garlic butter.

Notes

Baked lobster tails require good fat and seasoning for flavor, and should be served fresh to avoid becoming tough. Adding lemon juice to the garlic butter enhances flavor. Store in the refrigerator for up to 2 days; reheating is not recommended but can be done with caution.
