  • 1 lb skinless salmon fillet, finely chopped
  • 0.5 cup breadcrumbs use gluten-free for variation
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 tablespoon fresh parsley, finely chopped

Avocado Sauce

  • 1 ripe avocado, scooped and mashed
  • 0.5 cup sour cream
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Cooking Instructions

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the chopped salmon, breadcrumbs, egg, garlic powder, paprika, salt, pepper, and parsley until well combined.
  • Form small meatballs, about one inch in diameter.
  • In a separate bowl, mash the avocado and mix it with sour cream, lemon juice, and minced garlic until smooth.
  • Place the meatballs on a baking sheet and drizzle with olive oil.
  • Bake in the oven for 15-20 minutes or until golden brown.
  • Serve the baked salmon meatballs with the avocado sauce drizzled on top or on the side.

Notes

For a gluten-free option, use gluten-free breadcrumbs. Make sure the avocado is fully ripe for the best flavor. Adjust seasoning according to personal taste.
