Ingredients
  

Meat

  • 3 pounds beef brisket or chuck steak cut into 2-inch chunks
  • 6 ounces bacon roughly chopped

Vegetables

  • 1 large carrot sliced ½-inch thick
  • 1 large white onion diced
  • 12 small pearl onions optional
  • 1 pound white mushrooms fresh, quartered

Seasoning

  • 1 tablespoon extra-virgin olive oil
  • 1 pinch coarse salt
  • 1 pinch ground pepper
  • 2 tablespoons flour
  • 1 beef bouillon cube crushed
  • 1 teaspoon fresh thyme finely chopped
  • 2 tablespoons fresh parsley finely chopped, divided

Liquids

  • 3 cups red wine like Merlot, Pinot Noir, or Chianti
  • 2-3 cups beef stock depends on wine used
  • 2 tablespoons tomato paste
  • 6 cloves garlic minced, divided
  • 2 tablespoons butter

Instructions
 

Traditional Oven Method

  • Preheat oven to 350°F (175°C).
  • Heat the oil in a large dutch oven. Sauté the bacon until crisp, then transfer to a dish.
  • Sear beef chunks in the hot oil until browned on all sides, then transfer to the bacon dish.
  • Sauté carrots and onions until softened, add garlic and cook.
  • Return bacon and beef to pot, season with salt and pepper, sprinkle with flour and cook for 4-5 minutes.
  • Add pearl onions, wine, and enough stock to cover meat. Add tomato paste, bouillon, and herbs. Bring to simmer.
  • Cover and simmer in the oven for 2-3 hours until meat is tender.
  • Prepare mushrooms in a skillet with butter and garlic.
  • Strain the casserole contents, return beef to pot and add mushrooms.
  • Adjust sauce thickness and seasoning as necessary.
  • Serve warm with garnish and sides.

Notes

Can be made using stove top, Instant Pot, or slow cooker methods. Allow leftovers to cool and refrigerate before reheating.
