Ingredients
  

  • 2 cups all-purpose or plain flour
  • ¼ cup granulated sugar or sweetener
  • 4 teaspoons baking powder
  • ¼ teaspoon baking soda *For fluffier pancakes, optional
  • ½ teaspoon salt
  • 1 ¾ cups milk
  • ¼ cup butter melted and slightly cooled
  • 2 teaspoons pure vanilla extract
  • 1 large egg

Instructions
 

  • Combine flour, sugar (or sweetener), baking powder, baking soda, and salt in a large bowl. Make a well in the center and add milk, melted butter, vanilla, and egg.
  • Whisk the wet ingredients together, then slowly fold them into the dry ingredients until smooth.
  • Set the batter aside to rest while heating the pan or griddle.
  • Heat a nonstick pan or griddle over low-medium heat and lightly grease with butter. Pour ¼ cup of batter onto the pan.
  • Cook until the underside is golden and bubbles appear on the surface, then flip and cook until golden. Repeat with remaining batter.
  • Serve with honey, maple syrup, fruit, ice cream, or enjoy plain!

Notes

*For fluffier pancakes, you can add baking soda, but if you're sensitive to the taste, leave it out.
