Ingredients
  

Filling

  • 5 to 6 cups blackberries rinsed, picked clean, patted dry
  • ½ to ¾ cup sugar depending on how sweet the berries are
  • 1 teaspoon lemon juice use 2 teaspoons if using store-bought berries
  • 1 teaspoon lemon zest
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon almond extract
  • 4 to 6 tablespoons cornstarch, flour, or ground quick cooking instant tapioca use 4 tablespoons for wild-picked berries, 6 for store-bought
  • 1 recipe pie dough for top and bottom crust

Method

  • Combine the blackberries, sugar, cornstarch, lemon zest, lemon juice, cinnamon, and almond extract in a large bowl. Let sit for 30 minutes.
  • Preheat the oven to 400°F and place the rack in the middle.
  • Roll out the bottom crust and chill it in the refrigerator.
  • Roll out the top crust, keeping it as a solid disc or cutting it into strips for a lattice crust.
  • Spoon the berry mixture into the bottom crust. Cover with the top crust, sealing the edges.
  • Bake the pie at 400°F for 30 minutes. Then cover with aluminum foil, reduce the heat to 350°F, and bake for an additional 30 minutes.
  • Remove from oven and let cool completely before serving.

Notes

For the best results, use fresh blackberries when in season. Frozen can be used, but they should be properly defrosted and drained.
