Ingredients
  

Bread & Butter

  • 4 slices thick-cut sandwich bread
  • 1 tablespoon butter

Egg Mixture

  • 4 large eggs
  • 2 tablespoons milk
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Fillings

  • 4 slices cooked bacon
  • 1 cup shredded cheddar cheese
  • 1 tablespoon cream cheese optional for extra creaminess
  • 1 teaspoon chopped chives optional

  • In a skillet over medium heat, cook the bacon slices until crisp. Transfer to a paper towel-lined plate to drain excess grease.
  • In a bowl, whisk together the eggs, milk, salt, and black pepper until fully combined.
  • Reduce heat to low and pour in the egg mixture. Gently scramble the eggs, stirring frequently, until just set but still soft, about 2 to 3 minutes. Remove from heat.
  • Butter one side of each bread slice evenly; this side will be grilled to a golden crisp.
  • On the unbuttered side of two bread slices, layer half the cheddar cheese, then the scrambled eggs, followed by bacon slices, and top with remaining cheese. Optionally, spread cream cheese for extra creaminess before layering. Place remaining bread slices on top with buttered side facing out.
  • Heat a clean skillet or griddle over medium-low heat. Cook each sandwich for 3 to 4 minutes per side until the bread is golden brown and cheese inside is melted.
  • Slice the sandwiches in half and garnish with chopped chives if desired. Serve immediately while warm.

Notes

For extra flavor, add sliced tomato, avocado, or a dash of hot sauce inside the sandwich. Use sourdough or Texas toast instead of regular sandwich bread for a heartier option. To make it creamier, include the optional cream cheese spread inside. Cook bacon to your preferred crispiness.
