Cabbage Ingredients

  • 1-2 head green cabbage
  • 1 tablespoon avocado oil for brushing

Beef Patty Ingredients

  • 1 lb ground beef (450g)
  • 1 tablespoon Dijon mustard
  • 0.5 cup chopped parsley (15g)
  • 1 teaspoon minced garlic
  • 0.5 teaspoon sea salt or to taste
  • 0.25 teaspoon black pepper or to taste
  • 0.25 teaspoon red pepper flakes
  • 0.25 cup tomato sauce or ketchup (about 60ml)
  • 0.5 cup shredded cheese (about 60g)

Instructions
 

Cabbage Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Slice the cabbage into 1-inch (2.5 cm) thick steaks and arrange them on the sheet. Brush each with cooking oil and sprinkle with a bit of salt and pepper. Bake for 10 minutes, just enough to soften them slightly.

Beef Patty Preparation

  • While the cabbage bakes, mix together the ground beef, Dijon mustard, grated garlic, parsley, red pepper flakes, salt, and black pepper in a medium bowl. Divide the mixture into 4 equal portions and shape into patties.

Assemble and Bake

  • Remove the cabbage steaks from the oven. Spoon a little tomato sauce or ketchup on each cabbage slice. Place a beef patty on top of each one. Return the tray to the oven and bake for 10–12 minutes, or until the patties are cooked through.

Add the Cheese

  • In the last 2–3 minutes of baking, sprinkle mozzarella on top of each patty. Bake just until the cheese melts and bubbles slightly.

Serve

  • Remove from the oven and serve warm. Garnish with extra parsley, if desired. Enjoy your cabbage burgers as a main course or even as a fun appetizer!

Helpful Tips: Cabbage choice matters: Look for a tight, firm head of cabbage to ensure the steaks hold their shape during baking. Don't skip the pre-bake: Softening the cabbage before topping helps it cook evenly and makes it more tender. Customize the heat: Omit or adjust the red pepper flakes depending on your spice preference. Ketchup vs. Tomato Sauce: Both work well—ketchup gives a sweeter flavor, while tomato sauce is more savory.
