Ingredients
  

Salmon

  • 2 lbs salmon fillets
  • 1.5-2 tablespoon Cajun seasoning for salmon
  • 3 tablespoon avocado or olive oil divided
  • 2 teaspoon Cajun seasoning for veggies
  • 2 large bell peppers
  • 1 large red onion
  • 3 garlic cloves smashed and minced
  • salt may or may not be needed depending on Cajun seasoning mix

Instructions
 

Preparation

  • Preheat oven to 425°F.
  • Rub some oil over the bottom of a large cast iron skillet.
  • Slice peppers and onion, smash and mince the garlic. Mix veggies with Cajun seasoning and half of the oil.
  • Rub salmon pieces with remaining oil and then sprinkle Cajun seasoning all over.
  • Place salmon skin down in the skillet and spread veggies all around it.
  • Bake for 20-25 minutes, depending on the thickness of salmon.
  • Check salmon by touch or use a meat thermometer to ensure it reaches 145°F internal temperature.

Notes

Make sure your oil is good quality and neutral in flavor to avoid bitterness.
