Main Ingredients

  • 2 tablespoon butter
  • 2 tablespoon all-purpose flour
  • 3 cups chicken broth
  • 1 cup half-and-half Can substitute heavy cream
  • 3 cups cooked chopped chicken Rotisserie chicken can be used
  • 1 lb smoked or andouille sausage sliced and browned
  • 2 15-oz cans red beans rinsed and drained
  • 1 11-oz can white corn drained
  • 2 4-oz cans chopped green chilies undrained
  • 2 tablespoon dried minced onion flakes
  • ¼ teaspoon garlic powder
  • 2 teaspoon cumin
  • 1 teaspoon chili powder

  • 2 cups shredded pepper jack cheese

Instructions
 

Cooking Instructions

  • In a Dutch oven melt butter and stir in flour. Cook for 2 minutes. Gradually whisk in chicken broth and half-and-half. Bring to a boil and cook for 2 minutes, until thickened.
  • Add remaining ingredients and cook for an additional 10 to 15 minutes, stirring occasionally.

Notes

For a lower calorie option, use turkey smoked sausage. Feel free to add green bell pepper, fresh white onion, celery, or jalapeno for a kick. Can be made in the slow cooker and frozen.
