  • 1 cup cauliflower florets

  • Marinate the Chicken: In a bowl, combine chicken pieces with salt, pepper, cumin, coriander, turmeric, allspice, and cinnamon. Let it marinate for at least 30 minutes.
  • Sauté Onions and Garlic: In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until golden brown. Add minced garlic and cook for an additional minute.
  • Brown the Chicken: Add the marinated chicken to the pot. Cook until browned on all sides, about 5-7 minutes.
  • Add Vegetables: Stir in the carrots, bell peppers, and cauliflower. Cook for another 5 minutes, allowing the vegetables to soften slightly.
  • Add Rice: Rinse the basmati rice under cold water until the water runs clear. Add the rinsed rice to the pot, mixing it with the chicken and vegetables.
  • Pour in Chicken Broth: Carefully pour the chicken broth over the rice mixture. Stir gently to combine, ensuring the rice is submerged.
  • Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 30-35 minutes, or until the rice is cooked and the liquid is absorbed.
  • Rest: Once the cooking time is complete, remove the pot from heat and let it sit, covered, for an additional 10 minutes to allow the flavors to meld.
  • Flip the Dish: To serve, carefully invert the pot onto a large serving platter. Tap gently to release the Chicken Maglooba, revealing its beautiful layers.
