  • 1 cup Long-grain white rice or jasmine rice

  • ¼ cup Fresh cilantro, chopped

  • Melt coconut oil in a medium pot over medium heat. Add minced garlic and grated ginger, sautéing for 3-4 minutes until fragrant to build a flavorful base.
  • Stir together red curry paste, chicken broth, boiling water, coconut milk, fish sauce, and lime juice until well combined.
  • Add boneless chicken thighs to the pot, season with salt and black pepper, cover, and simmer gently for about 20 minutes until the chicken is tender and cooked through.
  • Meanwhile, cook jasmine rice separately according to package instructions until fluffy.
  • Slice the cooked chicken into pieces and serve in bowls topped with the flavorful coconut curry broth.
  • Sprinkle chopped green onions and fresh cilantro over the bowls and serve with lime wedges on the side for squeezing over the top.

Notes

Use boneless chicken thighs for the best tenderness and flavor. Adjust curry powder and red curry paste according to your preferred spice level. Cooking the rice separately ensures perfect texture and prevents the broth from becoming too thick. If desired, add more lime juice for extra brightness. For a gluten-free version, ensure fish sauce is gluten-free.
