Ingredients

  • 12 oz fettuccine Can swap with gluten-free pasta.
  • 4 pieces salmon fillets Frozen salmon works too; just thaw completely.
  • 2 tablespoons olive oil Avocado oil is a fine substitute.

Sauce Ingredients

  • 3 tablespoons butter Use vegetable shortening for a dairy-free option.
  • 4 cloves minced garlic Garlic powder can be used in a pinch.
  • 1 cup heavy cream Alternatively, mix Greek yogurt with milk for a lighter version.
  • 1 cup chicken or vegetable broth Low-sodium is preferred.
  • ½ cup Parmesan cheese Grana Padano or nutritional yeast are good substitutes.
  • ½ teaspoon crushed red pepper flakes Adjust according to heat preference.
  • 2 tablespoons chopped fresh parsley Basil or chives can work as substitutes.
  • 1 tablespoon lemon juice Lime is a suitable swap.

Instructions
 

Cooking Salmon

  • Pat the salmon fillets dry and season with salt and pepper.
  • Heat olive oil in a large skillet until shimmering.
  • Place the salmon fillets in the skillet, cooking for about 3-4 minutes on each side or until opaque and easily flaking.
  • Set the cooked salmon aside to rest.

Preparing Fettuccine and Sauce

  • While boiling salted water, cook the fettuccine to just shy of al dente.
  • Melt butter in the same skillet, then add minced garlic, cooking until fragrant but not browned.
  • Deglaze the skillet with broth, adding heavy cream and bringing to a gentle simmer.
  • Stir in Parmesan until the sauce is glossy and slightly thickened.

Combining Pasta and Sauce

  • Toss the fettuccine into the skillet, ensuring each strand is coated with sauce.
  • Add chopped parsley and lemon juice at the end to maintain freshness.
  • Nestle the salmon fillets into the dish to warm them without overcooking.
  • Taste the dish for seasoning and adjust with salt and pepper if needed.

Notes

For a lighter sauce, swap some heavy cream with Greek yogurt mixed with milk. Reserve pasta water for thinning the sauce.
