  • 1 cup orzo pasta
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 2 cups asparagus, trimmed and cut into 1-inch pieces
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, chopped for garnish

  • In a large pot of salted boiling water, cook the orzo according to package instructions. Drain and set aside.
  • In the same pot, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  • In the same pot, add asparagus and sauté for 3-4 minutes until tender but still crisp. Add minced garlic and cook for an additional minute.
  • Pour in chicken broth and heavy cream. Bring to a simmer, stirring to combine.
  • Stir in grated Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper as needed.
  • Add the cooked orzo and chicken back into the pot. Stir until everything is well combined and heated through.
  • Remove from heat, garnish with fresh parsley, and serve immediately.
