Ingredients
  

Vegetables

  • 2 Red peppers
  • 0.5 head White cabbage
  • 1 bunch Spring onions
  • 0.5 Cucumber
  • 2 Ripe mangos

Peanut Dressing

  • 125 g Peanut butter See notes
  • 4 tablespoon Soy sauce
  • 3 tablespoon Sweet chilli sauce
  • 1 tablespoon Honey
  • 2 whole Limes Zest and juice
  • 1 splash Water
  • 1 handful Fresh mint
  • 1 handful Salted peanuts

Instructions
 

Preparation

  • Chop everything up into small chunks and add to a bowl.
  • Mix the salad dressing in a separate bowl or jug. Add just enough water to make a smooth, runny sauce.
  • When ready to serve, add the dressing to the salad bowl and mix everything together.
  • Top with peanuts and mint.

Notes

Natural peanut butter is a lot more runny than regular so you’ll need less water than in the recipe if using this. Do this just before serving to avoid the cucumber going soft.
