  • 1.75 cups all-purpose flour
  • 1.75 cups granulated sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup full-fat sour cream
  • 0.5 cup guava puree not nectar
  • 1 teaspoon vanilla extract
  • 0.5 cup finely chopped toasted macadamia nuts for batter
  • 1 cup guava jelly or thick guava paste for filling

Frosting Ingredients

  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon lime zest
  • 0.25 cup heavy cream
  • 0.25 cup chopped toasted macadamia nuts for frosting garnish

Cake Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  • In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  • Add the softened butter to the dry ingredients and beat with an electric mixer until the mixture resembles coarse sand.
  • Beat in the eggs one at a time, mixing well after each addition.
  • In a separate bowl, mix the sour cream, guava puree, and vanilla extract.
  • Gradually add the wet mixture to the dry mixture, mixing on low speed until just combined. Do not overmix.
  • Fold in the ½ cup of chopped toasted macadamia nuts.
  • Divide the batter evenly between the prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.

Frosting Instructions

  • Prepare the frosting: Beat the softened cream cheese and butter until smooth.
  • Gradually add the powdered sugar, mixing until combined. Beat in the lime zest and heavy cream until the frosting is light and fluffy.
  • Once cakes are cool, place one layer on a serving plate. Spread the guava jelly evenly over the top.
  • Top with the second cake layer. Frost the top and sides of the entire cake with the macadamia cream cheese frosting.
  • Garnish the top edge with the remaining chopped toasted macadamia nuts.

Notes

For the best guava flavor, use thick guava puree or strained, reduced guava paste instead of thin nectar. Toast macadamia nuts lightly in a dry pan over medium heat for 5 minutes to bring out their flavor before chopping. Chill the cake for 30 minutes before slicing to help the frosting set firmly.
