  • 1 teaspoon Cinnamon Adjust to taste

Crust

  • 1 ½ cups Spelt Flour Can swap for all-purpose flour
  • ½ cup Butter Unsalted recommended
  • 1 tablespoon Sugar Adjust based on apple butter sweetness
  • ¼ teaspoon Salt Reduce if using table salt

Preparation

  • In a mixing bowl, combine spelt flour, butter, sugar, and salt until the mixture resembles coarse crumbs. Gradually add ice water, mixing until a dough forms. Roll out the dough and fit it into a pie dish.
  • Preheat your oven to 375°F (190°C). Weigh down the crust with pie weights and bake for 15 minutes. Remove the weights and continue baking for another 10 minutes, or until the crust is lightly golden.
  • In another bowl, whisk together the apple butter, eggs, cream, and spices until the mixture is smooth and well-combined.
  • Pour the apple butter filling into the prepared crust. Bake at a low temperature until the edges puff up and the center is slightly wobbly, about 45-50 minutes.
  • Once baked, allow the pie to cool completely, then refrigerate it for at least 6 hours to let it set beautifully.

Serving

  • Top with a dollop of Maple Whipped Cream for added richness!
