  • 1 large Red bell pepper Chunks
  • 2 teaspoon Ground cumin Part of spice blend
  • 2 teaspoon Ground turmeric Part of spice blend
  • 1 teaspoon Paprika Part of spice blend
  • 1 teaspoon Ground coriander Part of spice blend
  • ½ teaspoon Ground ginger Part of spice blend
  • ¼ teaspoon Cinnamon Part of spice blend
  • 1 pinch Saffron threads Optional part of spice blend
  • 1 can 14 oz Diced tomatoes With juices
  • 2 cups Vegetable broth Adjust for desired consistency
  • ½ cup Green olives Pitted
  • 1 can 14 oz Chickpeas Drained
  • to taste Salt and black pepper Seasoning
  • Drizzle Olive oil For garnish
  • Fresh cilantro Chopped for garnish
  • Fresh parsley Chopped for garnish
  • Lemon wedges For serving

Instructions
 

  • Heat olive oil and cook onions until soft and golden to develop sweetness.
  • Stir in garlic and ginger for a fragrant, flavorful base.
  • Toast all ground spices in hot oil to release deep aroma.
  • Mix in potatoes, carrots, bell pepper, tomatoes, broth, preserved lemon, olives, and chickpeas.
  • Cover and simmer gently until tender, then serve with fresh herbs and lemon wedges.
