  • 1 lb breakfast sausage, cooked Ensure fully cooked before mixing

Batter

  • 2 cups protein pancake mix (such as Kodiak)
  • 1.5 cups water
  • 0.25 cup sugar-free maple syrup
  • 1 cup shredded cheddar cheese

Preparation

  • Preheat your oven to 400 degrees F (175°C) and grease a 12-cup muffin tin.
  • In a mixing bowl, combine the protein pancake mix with water. Stir in the cooked sausage, cheddar cheese, and maple syrup until incorporated.
  • Spoon the batter mixture evenly into the muffin tin cups, filling each about three-quarters full.
  • Place the muffin tin in the oven and bake for 18-23 minutes, until golden brown and cooked through.
  • Allow to cool slightly before removing from the tin. Serve warm with extra maple syrup if desired.

Notes

These bites can be stored in the refrigerator for up to 4 days. Optionally, add spices like cinnamon or nutmeg to the batter for extra flavor.
