Ingredients
  

  • 3 medium ripe bananas mashed
  • 1.5 cups all-purpose flour (190 grams)
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cups unsalted butter melted and cooled (115 grams)
  • 0.75 cups granulated sugar (150 grams)
  • 2 large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon (optional)
  • 0.25 cups sour cream or plain Greek yogurt (optional, 60 grams)

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  • Mash the ripe bananas in a large bowl using a fork or potato masher until smooth with a few small lumps remaining.
  • Add melted butter to the mashed bananas and stir gently to combine.
  • Mix in sugar, beaten eggs, vanilla extract, and sour cream (if using). Beat lightly until smooth and well blended.
  • In a separate bowl, sift together the flour, baking soda, salt, and cinnamon.
  • Gradually fold the dry ingredients into the wet banana mixture using a spatula. Mix just until combined.
  • Pour the batter into the prepared loaf pan and smooth the top. Optionally, sprinkle chopped nuts or chocolate chips on top.
  • Bake for 60-70 minutes, checking at 55 minutes. Insert a toothpick into the center; if it comes out clean or with a few moist crumbs, it’s done.
  • Remove from oven and cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  • Slice and enjoy warm or at room temperature.

Notes

Use truly ripe bananas with brown spots for best flavor and natural sweetness. Avoid overmixing the batter to keep the bread tender. Room temperature eggs and dairy blend better. Check doneness early with a toothpick test. Let bread cool before slicing to set the crumb. For gluten-free, substitute flour with a gluten-free blend and add xanthan gum if needed. Vegan adaptations include flax eggs and dairy-free substitutes.
