Ingredients
  

  • 1.5 cups warm water 110°F to 115°F
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 0.5 cup baking soda (for boiling)
  • 1 egg egg (for egg wash)
  • coarse sea salt (for sprinkling)

  • Activate the Yeast: In a large bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes, or until it becomes frothy.
  • Mix Dry Ingredients: In another bowl, whisk together the flour and kosher salt.
  • Combine Mixtures: Gradually add the flour mixture to the yeast mixture. Stir until a dough begins to form.
  • Knead the Dough: Transfer the dough to a floured surface and knead for about 5 minutes, until smooth and elastic.
  • Let it Rise: Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm place for about 30 minutes, or until it doubles in size.
  • Preheat the Oven: While the dough is rising, preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.
  • Prepare the Baking Soda Bath: In a large pot, bring 8 cups of water and ½ cup of baking soda to a boil.
  • Shape the Pretzel Bites: Once the dough has risen, divide it into small pieces (about 1 inch each). Roll each piece into a rope and cut into bite-sized pieces.
