Instructions

  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until airy and well combined.
  • In another bowl, whisk the coconut milk, eggs, and vanilla extract until smooth.
  • Gently pour the wet ingredients into the bowl of dry ingredients. Stir until just combined, leaving a few small lumps.
  • Carefully incorporate the unsweetened shredded coconut into the batter, ensuring it's evenly distributed without overmixing.
  • Preheat a non-stick skillet over medium heat. Add the melted butter to coat the surface evenly.
  • Pour ¼ cup of batter for each pancake into the skillet. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 2 minutes until golden brown.
  • Transfer the pancakes to a low oven to keep warm while you cook the remaining batter. Serve with your favorite toppings.

Notes

Avoid overmixing the batter for fluffiness. Use room-temperature eggs for optimal texture. Maintain medium heat while cooking pancakes for best results.
