Preparation Steps

  • Preheat your oven to 375°F (190°C) and grease an 8x8 or 9x9-inch baking dish with olive oil.
  • In a skillet, heat olive oil over medium heat. Add ground beef, breaking it apart as it browns (about 5-7 minutes).
  • Add finely chopped onion and minced garlic; sauté for 2-3 minutes until softened and aromatic.
  • Stir in taco seasoning, salt, and black pepper, mixing well to coat the beef evenly.
  • Lower heat and add drained diced tomatoes, cream cheese, and sour cream. Stir until creamy and mixed.
  • Spread the creamy beef mixture evenly in the baking dish. Top with shredded cheddar and Monterey Jack cheeses.
  • Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly.
  • Cool for a few minutes then garnish with green onions or cilantro before serving.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. Reheat in the oven at 350°F for 15-20 minutes.
