  • 2 sticks unsalted butter browned
  • 1.25 cups granulated sugar
  • ¾ cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt

Preparation

  • Melt the butter in a light-colored saucepan over medium heat until foamy, brown bits form, then pour into a heatproof bowl.
  • Whisk the granulated sugar and brown sugar into the warm brown butter until fully combined.
  • Whisk in the eggs one at a time until just incorporated. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, cocoa powder, and salt.
  • Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  • Fold in the chocolate chips.
  • Pour the batter into an 8×8 inch baking pan lined with parchment paper.
  • Bake at 350°F for 25 to 30 minutes, until edges look set.
  • Let the brownies cool completely in the pan on a wire rack before slicing.

Notes

Browning the butter enhances flavor and creates a denser, chewier texture. Higher brown sugar retention ensures moisture for chewiness. Cool completely before cutting to prevent crumbling.
