Marinade

  • ¼ cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Chicken

  • 4 pieces boneless, skinless chicken breasts

  • 1 cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped

Preparation

  • In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper. Add the chicken breasts and ensure they are well-coated. Let them marinate for at least 30 minutes to absorb the flavors.
  • If using a grill, preheat it to medium-high heat. For an oven, preheat to 400°F (200°C).
  • Place the marinated chicken on the grill or a baking sheet if using the oven. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  • During the last few minutes of cooking, sprinkle crumbled feta cheese over the chicken breasts. Allow it to melt slightly.
  • Once cooked, remove the chicken from the heat and let it rest for 5 minutes. This helps retain the juices.
  • Before serving, sprinkle chopped parsley over the chicken and arrange lemon slices on the plate for a fresh touch.
