Ingredients
  

For the Cookies

  • 2 cups All-Purpose Flour Substitute with gluten-free flour for a gluten-free version.
  • ¼ cup Cornstarch
  • 1 teaspoon Baking Powder
  • 1 cup Salted Butter Can be replaced with firm vegan margarine.
  • 1 cup Granulated Sugar
  • 2 tablespoons Lemon Zest Fresh or dried.
  • 1 tablespoon Dried Lavender Buds Use culinary-grade for best results.
  • 1 Large Egg

For the Glaze

  • 1 cup Powdered Sugar
  • 2 tablespoons Fresh Lemon Juice
  • 1 teaspoon Lavender Extract Optional.
  • Purple Food Coloring a few drops, Optional.

Directions

  • Preheat your oven to 350°F (180°C) and line your baking sheets with parchment paper.
  • In a mixing bowl, whisk together the all-purpose flour, cornstarch, and baking powder until well combined.
  • In a separate bowl, beat the softened salted butter, granulated sugar, lemon zest, and dried lavender buds together until light and fluffy.
  • Add the large egg to the creamed mixture and mix thoroughly.
  • Gradually blend the dry ingredients into the wet mixture, mixing until just combined.
  • Using a tablespoon, drop balls of dough onto your prepared baking sheets, spaced 2 inches apart.
  • Gently flatten each dough ball to about ⅓ inch thickness.
  • Bake for 12-15 minutes until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack.
  • Mix the powdered sugar and fresh lemon juice in a bowl to prepare the glaze.
  • Spoon the glaze over the cooled cookies, garnishing with lavender buds and lemon zest if desired.
  • Let the glaze set for about 30 minutes.
  • Store in an airtight container for up to 4 days.

Notes

Chill the dough up to 24 hours for improved flavor and shape retention. Use culinary-grade lavender for optimal flavor.
