  • 2.5 cups crushed vanilla wafer cookies or graham crackers
  • 1 zest of lemon
  • 2 tablespoons fresh lemon juice

Preparation Steps

  • Crush the Cookies: Place vanilla wafers or graham crackers in a food processor and pulse until finely ground.
  • Mix the Dough: In a large bowl, combine the crushed cookies, sweetened condensed milk, lemon zest, and lemon juice. Stir until fully combined.
  • Chill: Refrigerate the mixture for 30–45 minutes.
  • Shape the Truffles: Scoop about 1 tablespoon of the mixture and roll into balls using your hands.
  • Coat and Serve: Roll each ball in your desired coating and chill for an additional 15–30 minutes before serving.

Notes

Chilling the mixture helps in rolling the truffles more easily. Feel free to experiment with different coatings for variation.
