Chicken and Vegetables

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 piece red bell pepper, sliced
  • 1 piece yellow bell pepper, sliced
  • 1 piece red onion, sliced
  • 3 cloves garlic, minced
  • ½ cup Kalamata olives, pitted and halved
  • ¼ cup olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 piece lemon, juiced
  • Fresh parsley, chopped for garnish

Cooking Instructions

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, mix olive oil, lemon juice, oregano, salt, and pepper.
  • Add the chicken breasts to the bowl and coat them well with the marinade. Let them marinate for 10-15 minutes.
  • In a large baking dish or sheet pan, arrange the cherry tomatoes, bell peppers, red onion, and garlic.
  • Place the marinated chicken breasts on top of the vegetables.
  • Sprinkle the Kalamata olives over the chicken and vegetables.
  • Place the pan in the oven and bake for 40-45 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Remove from the oven and let the dish rest for 5-10 minutes to allow the juices to redistribute.
