Instructions
Raspberry Jam
Add the raspberries, sugar and lemon juice to a saucepan and heat until the raspberries are no longer frozen and have started to break down.
Let it simmer for 23-25 minutes until thickened. Cool down to room temperature.
Raspberry Syrup
Place sugar, water and raspberries in a small saucepan over high heat until boiling.
Simmer for 3 minutes, then strain and discard solids. Pour in limoncello and cool to room temperature.
Mascarpone Filling
Cream mascarpone, powdered sugar, lemon juice and vanilla paste until combined.
Add heavy cream and whisk until medium-stiff peaks form.
Assembling
Layer mascarpone cream in a dish, dip lady fingers in raspberry syrup, and add to the dish.
Add half of the mascarpone cream and raspberry jam. Repeat the process and let set in fridge for 8 hours.
Before serving, add remaining raspberry jam and decorate with fresh raspberries and lemon slices.
Notes
This dessert is best prepared a day in advance for the flavors to meld and improve.
