Ingredients
  

Vegetables

  • 1.5 pounds baby potatoes can also use russet or Yukon gold potatoes
  • 2 cups broccoli cut into bite sized pieces

Chicken

  • 1 pound chicken breasts or tenders cut into cubes

Sauces and Oils

  • 1 tablespoon olive oil
  • 1 cup garlic parmesan sauce homemade or store bought

Spices

  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Cheese

  • 1 cup mozzarella cheese shredded
  • 0.5 cup grated parmesan cheese

Instructions

  • Wash the potatoes and cut them in half.
  • Place in the slow cooker and add the olive oil, paprika, garlic powder, onion powder, Italian seasoning, salt, pepper and stir until coated.
  • In a small bowl add the chicken cubes and the garlic parmesan sauce and toss until coated. Place the coated chicken in the slow cooker and give it a toss.
  • Cook on low for 6 hours or high for 3 hours.
  • The last 20 minutes, add in the broccoli florets.
  • The last 5 minutes, sprinkle the shredded cheese on top, put the lid back on and let the cheese melt.
  • Serve with some extra sauce if desired.

Notes

You can make my Garlic Parmesan Sauce or purchase store bought. Chicken thighs can be used instead of chicken breasts. Green beans, or cauliflower can be used instead of broccoli.
