Ingredients
  

For the Slow Cook

  • 650 g Skinless, boneless chicken breast About x4, cut into bite sized pieces
  • 30 g Plain flour
  • 3 Garlic cloves Peeled and crushed
  • 100 g Sun dried tomatoes Drained and very finely chopped
  • 1 teaspoon Dried oregano
  • 2 teaspoon Paprika
  • 300 ml Boiling water
  • 1 Chicken stock cube undiluted, crumbled

To Finish

  • 100 g Cream cheese
  • 50 g Parmesan Grated
  • 15 g Fresh basil leaves
  • Sea salt to taste
  • Freshly ground black pepper to taste

Instructions
 

Preparation

  • Toss chicken in the plain flour with plenty of salt and pepper until well coated.
  • Put into the slow cooker with the garlic, tomatoes, oregano, paprika, crumbled stock cube and water.
  • Cook on HIGH for 2.5-3 hours or LOW for 5-6 hours until the chicken is cooked through.
  • Mix in the remaining ingredients just before serving.

Notes

Use sun dried tomatoes from jars in oil. Drain the oil and pat dry. Cut them very finely to avoid chewiness when slow cooked.
