Wet Ingredients
- 4 large ripe bananas, mashed about 450 g / 1 lb
- 200 g light brown sugar packed, about 1 cup
- 2 large eggs
- 2 teaspoon vanilla extract
- 113 ml vegetable oil about ½ cup
Dry Ingredients
- 255 g all-purpose flour about 2 cups
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 0.5 teaspoon ground cinnamon about 0.25 g
- 0.5 teaspoon allspice
Add-ins
- 100 g chopped walnuts divided (¾ cup for batter + ¼ cup for topping)
- 30 g banana chips, crushed about ½ cup, for topping
Baking Instructions
Preheat the oven to 175°C (350°F). Grease and line a 9x5-inch loaf pan with parchment paper.
Whisk the wet ingredients together: the brown sugar, eggs, vanilla extract, and vegetable oil until well combined.
To the same bowl sift flour, baking soda, baking powder, cinnamon, and allspice.
Stir gently until just combined (do not overmix).
Fold in walnuts: Stir in about ¾ cup (75 g) chopped walnuts.
Pour the batter into the prepared loaf pan. Sprinkle the top with the remaining walnuts and crushed banana chips.
Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly, cover loosely with foil during the last 15 minutes.
Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
