For the Cake

  • 2 cup GF or all-purpose flour
  • 2 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 8 tablespoon butter
  • cup granulated sugar
  • cup brown sugar
  • 1 cup mashed bananas approximately 2 bananas
  • cup maple syrup
  • 2 teaspoon vanilla extract
  • ¾ cup buttermilk

For the Toffee Sauce

  • 8 tablespoon butter
  • ¾ cup brown sugar packed
  • ¾ cup heavy cream
  • 1 teaspoon vanilla extract

Baking Instructions

  • Preheat the oven to 350°F (175°C). Spray a 9x9x3” or 9x11x3” deep baking dish with nonstick baking spray. Note: Using a larger baking dish will affect the bake time, so always check the cake for doneness with a toothpick.
  • In a large mixing bowl, cream together the granulated sugar, brown sugar, and butter for about 3 minutes until light and fluffy. Mix in the eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas until well combined.
