Ingredients
  

Potatoes

  • 5 lbs russet potatoes peeled and cubed
  • 8 tablespoon salted butter melted
  • 2 tablespoon salted butter cold
  • 8 oz cream cheese softened and cubed
  • 1 cup half and half
  • ½ teaspoon salt
  • Pepper to taste

Garnish

  • chives optional, for topping

Instructions
 

Preparation

  • Preheat oven to 350°F.
  • Peel the potatoes and cut into medium sized cubes. Rinse and drain.
  • Boil the potatoes in a large pot with salt until fork tender (10-15 minutes). Drain and return to pot.
  • Steam out excess moisture on low heat for 3 minutes.
  • Beat potatoes on low until broken up, then mix in warm melted butter, salt and pepper.
  • Mix in cream cheese and gradually add warm half and half to reach desired consistency.
  • Spread into a greased 9x13 baking dish and sprinkle cold butter over the mashed potatoes.
  • Bake for 45 minutes, then serve.

Notes

Potato Size: Cut potatoes the same size for even cooking. Use milk instead of half and half for a lighter version. Make ahead by refrigerating before baking and adjust bake time accordingly.
