Instructions
Method
- Rinse lentils under cold water until the water runs clear, discarding any debris.
- Layer chopped yellow onion, minced garlic, diced carrot, and celery at the bottom of the slow cooker.
- Add the rinsed lentils, vegetable broth, fresh thyme, rosemary, bay leaf, salt, and pepper into the slow cooker. Stir gently to combine.
- Cover and cook on low for 7-8 hours or high for 3-4 hours, stirring halfway through.
- Discard the bay leaf, taste the lentils, and adjust seasoning as necessary.
- Optional: Garnish with a drizzle of olive oil and fresh parsley before serving.
