Ingredients
  

Dressing

  • ¼ cup Olive Oil substitute with avocado oil for a different twist
  • 2 tablespoons Lemon Juice or lime juice for a unique twist
  • 2 tablespoons Red Wine Vinegar or white wine vinegar
  • 1 teaspoon Dijon Mustard or yellow mustard for a milder flavor
  • 2 cloves Garlic freshly minced for best taste
  • 1 teaspoon Oregano or Italian seasoning
  • ½ teaspoon Red Pepper Flakes adjust to taste
  • 1 teaspoon Salt adjust according to taste
  • ½ teaspoon Black Pepper adjust according to taste

Salad

  • 1 can Cannellini Beans rinsed and drained
  • 1 can Kidney Beans rinsed and drained
  • 1 can Chickpeas rinsed and drained
  • 1 cup Cucumber diced or zucchini
  • 1 cup Cherry Tomatoes halved or diced large tomatoes
  • 1 cup Bell Pepper diced any color
  • ½ cup Kalamata Olives pitted and halved
  • ¼ cup Parsley freshly chopped or cilantro
  • ¼ cup Red Onion thinly sliced or yellow onion
  • ¼ cup Basil fresh, chopped, add just before serving
  • ½ cup Feta Cheese crumbled or goat cheese

Preparation

  • Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, oregano, red pepper flakes, salt, and black pepper until fully combined.
  • Prepare Vegetables: Dice the cucumber, halve the cherry tomatoes, dice the bell pepper, thinly slice the red onion, and halve the Kalamata olives. Chop the parsley and basil separately.
  • Combine Salad Ingredients: In a large mixing bowl, add the rinsed and drained beans, diced cucumber, halved tomatoes, diced bell pepper, sliced onion, and halved olives. Toss together.
  • Dress the Salad: Pour the dressing over the salad ingredients and toss thoroughly to ensure every piece is coated.
  • Add Final Touches: Gently fold in the fresh basil and crumbled feta cheese just before serving.

Notes

Chill for at least 30 minutes for the best flavor. Always add feta just before serving to maintain its creamy texture.
